Daring Cooks November 2010 Souffle

I was thrilled to be able to make souffle this month. It has been on my list of dishes to make after seeing "Sabrina" with Audrey Hepburn. She attends cooking school in Paris and turns out to be a pitiful chef. When making souffle she forgets to turn the oven on. Souffle isn't a very difficult dish and dessert souffle's often are more lofty than their savory counterparts, due to the ratio of egg to other moist ingredients. I chose to make a goat cheese and chive souffle and loved the results.
